How do I use the Caffettiera?

  • Fill the lower water chamber with water, just up to the safety valve inside. It's important to never fully cover the safety valve with water, as this could prevent it from working if need be.
  • Rest the coffee basket on top of the lower water chamber, and fill with coffee that has been specially ground for stovetop use (about 2-3 heaped teaspoons). Never pack or press the coffee down, or try an wing it with a different type of grind, as this could prevent the water from being able to pass through to the upper chamber and pose a safety risk
  • Screw the upper chamber on, and place over medium heat. When you hear a gurgling or hissing sound, open the lid to see if the coffee has filled to the top of the chamber and when it has, remove from heat.
  • Enjoy! This dense and rich brew is invigorating on its own, or pairs beautifully with milk and cream.

How much coffee does it make?

Our Caffettiera makes roughly 300ml of coffee. To put that in perspective, your average mug is 240-350ml (though you would certainly know you're alive if you drank that much).

We have always found this is a good size for 2 people who have 1-2 coffees a day. We also keep left overs and re-heat the next morning, but each to their own!

What type of coffee should I use?

It's very important that you only use coffee that is specifically ground for use in a Caffettiera. If you're purchasing ready-ground coffee, look for one that says "Stovetop grind". If you're grinding yourself, go for a medium-fine grind.

This is because the coffee must not be ground too coarsely that it prevents the water in the lower chamber being able to rise up, or too finely that it clogs the coffee basket with the same result.

What's the difference between a Caffettiera and a Moka Pot?

They're the same. (But we think Caffettiera sounds better & it's what Nonna used to call it!)

What's the difference between Stainless Steel and Aluminium?

  • Versatility of stovetop: Stainless Steel Caffettieras can be used on any type of stove, including induction and ceramic. Aluminium, however, is only suitable for gas or electric stovetops.
  • Oxidisation & scaling: Aluminium models are prone to oxidisation and limescale build up. While technically it's still safe to brew and consume coffee in a Caffettiera that has experienced oxidisation or limescale build up, we get that it's not ideal. See our FAQ on cleaning and descaling.
  • Time to brew & heat retention: Because Aluminium is a softer, thinner material, it is typically a minute or two faster to brew a batch of coffee than it is in a Stainless Steel model. In saying that, a Stainless Steel Caffettiera will retain heat for longer once brewed ⚖️

Can I use this on an induction stove?

Stainless Steel Caffetterias work perfectly on induction stoves.

Aluminium Caffettieras do not.

What makes this style of coffee sustainable?

The Caffettiera is low tech, and low waste. If you choose to compost the coffee grounds after use, then you could say it's zero waste.

If you look after your Caffettiera properly, you can expect longevity and durability out of this wonderfully simple device.

How do I clean my Caffettiera?

Make sure the Caffettiera is cool-to-touch. Unscrew the top chamber, take out the coffee basket and empty the coffee grounds into the bin (a good bang or two should do it). Then...

  • For Aluminium models: wash all 3 parts of your Caffettiera with warm water and a soft cloth. Do not use a detergent or any harsh cleaning agent, and do not use an abrasive material to scrub. Leave the parts to dry seperately and do not store or re-asemble until completely dry. This is very important to avoid oxidisation and lime scale build up.
  • For Stainless Steel models: wash all 3 parts of your Caffettiera with warm water and a gentle dishwashing liquid if desired. Leave the parts to dry seperately before storing or re-asembling.

We don't know who needs to hear this, but please don't put it in the dishwasher.

How do I descale my Caffettiera?

Your aluminium caffettiera may change colour inside. This usually happens when the caffettiera is not dried properly, or is washed with soaps or harsh chemicals, causing the aluminium to oxidise. Please note, this oxidation does not affect the flavour of your coffee or the function of your Caffettiera. 

To clean the inside, use warm water with a little white vinegar or lemon juice added, scrub with a brush or scour, and dry thoroughly.

Why isn't the coffee filling to the top?

In order to avoid a burnt or bitter tasting brew:

  • Remove the Caffettiera from the heat immediately once the coffee pot is full, do not allow it to boil, otherwise the dry heat will cause burnt bean aromas to rise to the upper chamber.
  • Do not brew your coffee on a high heat, as this can also cause the coffee to have a burnt taste. Medium heat is best.
  • Be sure not to pack your coffee in to the coffee basket.

Why does my coffee taste burnt or bitter?

There are a few things to check, to ensure that you are brewing fully and perfectly:

  • Make sure that your coffee basket is clean and free of debris.
  • Ensure that the ground coffee is not packed too tightly into the coffee basket as this hinders the flow of the water through to the upper chamber.
  • Your coffee grind may be too coarse or too fine. The Caffettiera works best with a stovetop grind.

Why is my Caffettiera leaking?

If there is any leaking, please ensure your Caffettiera chambers are firmly screwed together.

Also ensure you are not using a grind of coffee that is too fine.

What temperature water should I use?

Depends who you ask! We prefer to use warm or hot water straight from the tap. This means the Caffettiera sits on the element for less time and reduces the chance of the coffee burning.

How long does it take to make coffee with a Caffettiera?

For a 6 cup Caffettiera (which all enbocca Caffettieras are), it takes between 4-6 minutes.
